Fall-tastic Apple Cinnamon Oatmeal
Apple picking is in full-swing! Turn your apples into a delicious, hearty breakfast (or snack) with this quick recipe!

Ingredients
Oatmeal recipe
•1 cup rolled oats
•2 cups milk of choice
•1 TBSP maple syrup
•½ tsp cinnamon
•pinch of salt
•optional: ½ tsp gingerbread spice or pumpkin pie spice
Apple recipe
•3 medium apples
•1 TBSP maple syrup
•½ tsp cinnamon
•pinch of salt
•1 tsp vanilla flavor
•1 TBSP lemon juice
•optional: ½ tsp gingerbread spice or pumpkin pie spice
Toppings for serving (optional)
•chopped nuts
•drizzle maple syrup
•shredded coconut
Directions
1. Cookthe apples: Peel and quarter the apples, then remove the cores, cut into small cubes and add into a medium pot. Add all the other ingredients (spices, maple syrup, lemon juice, and vanilla extract). Cook the apples over medium heat until soft (but not mushy, they should be still slightly crunchy), for about 5-10 minutes (the cooking time will vary depending on size and the variety of apples). A thick syrup should form around the apples (if it's too thin cook the apples a little longer over high heat).
2. Cook the oatmeal: Mix all the ingredients for the oatmeal in a medium pot and simmer over low heat for about 10 minutes or until the oats are soft. If the oatmeal is too thick add more milk or water, if too thin cook it a little longer. Take the pot off the heat, pour the oatmeal into bowls. The oatmeal should be very runny at this point, by the time it is cooled down and ready to eat it will thicken significantly.
3. Spoon the apples over the oatmeal, with optional sprinkle of chopped nuts, coconut, and maple syrup.
